Chocolaty Cookies

At long last a recipe!

We doubled this from the cookbook and it made about 40 cookies.  You can half it if you don't want so many.

2 tablespoons butter
2 eggs
1 cup sugar (you could use less)
1 tsp vanilla

Mix all this together until smooth.  Add:

1 1/2 cups flour
1 teaspoon baking powder
6 tablespoons unsweetened cocoa powder
1/2 tsp salt

Mix it all together, then add 1/2 cup chocolate chips, and 1/2 cup chopped nuts if you want (we didn't).

Now cover the batter with plastic wrap and put in the freezer for one hour.

To make the cookies, take small balls of the dough and roll them in powdered sugar.  The kids made the balls about the diameter of a quarter - I made them a little bigger.  Put them on a greased cookie sheet or on greaseproof paper on the tray.  Put them back in the freezer for 10 minutes, then straight to a 350 degree/170 degree oven.  Bake for 12 minutes or more or less.  The sugar on top gets cracks and looks fun.  I found them a bit soft at 12 minutes, but your mileage may vary.  Personally, I would skip the sugar coating, but the kids enjoyed doing it!
