These are soooo good! (Inspired by Larabars, made by Gabi)
Makes about 10 bars
Ingredients:
1/2 cup almonds
1/2 cup cashews
1 cup pitted dates
4 tablespoons cocoa powder
1 tsp peppermint extract
1/2 cup dark chocolate chips
Blend first 5 ingredients in a food processor until smooth. Add more cocoa powder if it doesn't taste chocolaty enough.
Mix in chocolate chips.
Shape into bars and freeze.
