Gail's kale soup

I made my own vegan kale soup based on a recipe I found on food.com and what was in the house. 

Here's what's in it:

3 cloves chopped garlic

1 diced carrot

1 large bunch of kale, sliced

2 large potatoes cut in small cubes

3 plum tomatoes, peeled and chopped

2 tablespoons chopped parsley

3 bay leaves

2 tablespoons organic vegetable broth powder (aka soup mix)

1 teaspoon brown sugar

1 tablespoon red curry sauce

1 teaspoon paprika

8 cups water (possibly more)

 

I fried the garlic and carrot in olive oil, added everything else and cooked about 40 minutes. My daughter and I are happy.
