I made this today because we needed something sweet and we had the ingredients. It's from a passover recipe book. It comes out kind of like a lemon meringue pie but not. I could have done without the bananas but other folks liked them. It's called a fruit meringue pudding.
Separate 3 eggs. Peel and grate 5 apples. Grate the zest of one lemon and juice the lemon. Beat the egg yolks with 1/2 cup sugar until light colored. Add the lemon stuff and the apples. Add 1/2 cup matzo meal. Mix it well. Put in a greased pan and bake 40 minutes at 350 F.
Meanwhile, beat the egg whites till stiff and beat in 1/4 cup sugar by tablespoonfuls. Slice 2 bananas. When the oven mixture is done, take it out and arrange the banana slices on top. Then put the egg whites on top of that. Bake again at 300 F for about 15 minutes until browned on top. I think it would be best served hot but we served it a few hours later and folks ate it up.
